Fish tacos are easily one of the greatest foods known to human beings. They’re perfect all year round in a variety of different ways, but one of my favorite recipes is this grilled halibut taco with mango salsa. They’re packed full of big flavors perfect for the late spring and early summer.
4 (4-to-6-ounce) skinless halibut fillets
1 cup finely chopped mango
1/2 cup finely chopped tomato
1/2 cup finely chopped red onion
Juice of 1/2 a lime
2 tablespoons finely chopped cilantro
8 Corn Tortillas
Wayzata Bay Taco Seasoning (or another favorite variety)
Salt & Pepper
In a large mixing bowl, combine the mango, tomatoes, onions. cilantro, and lime juice and stir to combine. Season with salt and pepper to taste and refrigerate until needed.
Pat the halibut fillets dry and season with salt and Wayzata Bay Taco Seasoning. Using the vegetable oil, oil your grill grates and place fish on over high-heat and cook for 3-4 minutes per side.
Once the fish is done, grill the tortillas for about 10-20 seconds per side.
