Paella is a classic Spanish dish that's a lot of fun to make and even more fun to eat! You can really use whatever mix of fish and shellfish you like, so it's easy customizable, but this version with Shrimp, Clams, and Fish is a great way to get you started!
As for types of fish, you could easily use Monkfish, Cod, Halibut, or really any fin-fish you like. You could also add mussels, scallops, or whatever you like. Mix and match and make it however you like it!
1/2lb Shell-on or EZ Peel Shrimp
1/2lb Fish, cut into 1" pieces
1 large Shallot, minced
6oz Chorizo, roughly chopped
2 tablespoons Matiz Sofrito
1 cup Paella (Bomba) Rice
3 cups Seafood (or chicken) Stock
2 tablespoons Sherry (optional)
2 tablespoons butter
Fresh Parsley (for garnish)
Lemon Wedges (for garnish)
Place a large skillet or paella pan over medium-high heat and add butter. Once melted, add shallots and chorizo and cook until the shallots have softened.
Add in the Matiz Sofrito and cook for 2-3 minutes, or until most of the moisture from the Sofrito has cooked out
Add the paella rice and stir to fully coat the rice with Sofrito and chorizo mixture.
Add sherry and cook until the sherry is fully absorbed
Add in the stock and bring to a simmer. Reduce heat to medium or medium-low and cook for approx. 15 minutes or until the rice is approximately 2/3's of the way cooked.
Add the fish and continue to simmer for 3-5 minutes or until the fish is almost cooked through and then add the clams and shrimp. Cover and cook until the clams open and the shrimp has steamed through. Approx. 3-4 minutes.
Remove cover and continue to simmer until rice is fully cooked through and most of the liquid has been absorbed
Turn off heat and allow to rest for 5-10 minutes
Garnish with fresh parsley and lemon wedges and serve
