Scallops are easily one of the all-time great seafood options and it's in part to their natural sweetness. When served raw you can take advantage of other bright flavors to really boost and highlight all that scallops have to offer.
For this recipe we utilize Finger Limes, which are a really neat ingredient that pack tons of flavor. Finger Limes are packed full of small little pearls which look like caviar, but pack big lime flavor. To use them, basically cut them in half and scrape out the small pearls with a spoon.
