Popcorn shrimp are a many splendid thing. Not only can you eat them on your own, but they also make the PERFECT Shrimp Po Boy!
Popcorn Shrimp & Po Boy
Serves up to 4
2lbs Rock Shrimp (or other small shrimp)
1 cup Flour
1 cup Buttermilk
1 tablespoon Cajun or Seafood Seasoning of your choice
For Optional Po Boys: French Bread, Shredded Lettuce, Sliced Tomato, & Mayo
Drain shrimp and pat dry
Add flour and seasoning to one mixing bowl and add buttermilk to another. Lightly dredge shrimp in flour, then the buttermilk, and then again in the flour to fully coat. Repeat for all shrimp.
Add enough oil to a pot to cover shrimp. Bring oil to 350 degrees and fry shrimp in batches until golden brown, approximately 2-4 minutes per batch. Place shrimp on a plate lined with a paper towl to drain away excess oil and season with salt
For Po Boys, add mayo, lettuce, and tomato to your French Bread and even distribute shrimp among sandwiches. If eating the Popcorn Shrimp on their own, serve with cocktail sauce or your favorite shrimp related dipping sauce
