For some people, the beginning of Soft-Shell Crab season is like a holiday, and really, it's hard to blame them. Not only are these sweet little crabs delicious, they're super simple to make and only require a few ingredients to help take them to the next level!
Pan Fried Soft-Shell Crabs
8 ‘hotel-sized’ softshell crabs, dressed
½ cup all-purpose flour
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons canola oil
2 tablespoons butter
juice of 1 lemon
Combine flour, salt and pepper in a bowl.
Dredge crabs in flour mixture, shake off excess.
In a large skillet heat butter and oil over medium-high heat until just starting to smoke.
Add crabs and cook for approximately 2 minutes per side, until golden brown and just cooked through.
Sprinkle with lemon juice and serve with your favorite hot sauce, tartar sauce, or remoulade.
