It’s hard to get better than a big bowl of steamed mussels, but when you take things outside the box a bit and add a green curry twist, you’re bringing things to a whole new level!
Green Curry Mussels
Serves 4
INGREDIENTS:
2lbs Fresh Mussels, cleaned
1/2 Cup Green Onions, chopped
1 Tablespoons Fresh Ginger, grated
1 Fresno Chili, sliced (optional garnish)
1 Loose Cup Thai Basil
Fresh Cilantro (garnish)
2 Tbsp Green Curry Paste
12oz Coconut Milk
1Tbsp Fish Sauce
1Tbsp Soy Sauce
1Tbsp Brown Sugar
2Tbsp Oil
DIRECTIONS:
Add oil to a large, hot pan. Add green onions and ginger and cook until softened.
Add green curry paste, brown sugar, fish sauce, and soy sauce and stir until combined
Add coconut milk and stir until combine then bring to a simmer
Add mussels in a nice even layer and sprinkle half the Thai basil over the top. Cover and steam until all the mussels have opened, 3-5 minutes. Discard any unopened mussels
Place the mussels and broth in a large serving dish. Garnish with optional chilis, additional Thai basil, and cilantro
