Fresh Shucked Oysters with Cucumber Chili Mignonette

Fresh shucked oysters are a true joy and with a simple condiment, they can be taken to a whole new level! This sweet, sour, and spicy mignonette, a traditional sauce to pair with oysters, really works to highlight the briny flavor of the oysters.

Fresh Shucked Oysters with Cucumber Chili Mignonette

Serves 2-4

INGREDIENTS:

• 12 of your favorite fresh oysters
• 1 cup O-Med Cider Vinegar
• 2 Tablespoons finely chopped green onion or shallot
• 2 Tablespoons finely chopped cucumber
• 2 Tablespoons finely chopped fresno chili
• Limes & Cilantro (optional garnish)
• Salt

DIRECTIONS:

1. Add vinegar, onion or shallt, cucumber, and fresno chili to a small mixing bowl and stir to combine. Refriderate for at least 30 minutes before serving to allow the flavors to combine. The longer the better
2. Add enough salt to a serving platter to allow your oysters to sit up and not fall over
3. Thoroughly wash your oysters
4. Using an oyster knife and a clean dish towl, shuck your oysters and place on your prepared serving platter
5. Spoon about a tablespoon of the mignonette mixutre into each oyster and garnish your platter with the optional limes and cilantro
