There’s just no getting around that this is the perfect warm weather dish and it’s so incredibly easy to make, that it’s sure to be a new go to. Somewhere in between a ceviche and a chilled summer soup, this dish highlights the natural sweetness of the Bay Scallops with a bright tartness that's just made to pair with a warm summer night.
Excellent as an appetizer or as a light meal for two.
Chilled Bay Scallops with Tomato Ponzu & Lime
1lb Bay Scallops, fully drained and dried
1/2 cup roughly chopped cucumber
1/2 shallot, roughly chopped
1/2 cup tomatoes, roughly chopped
1 cup Tomato Ponzu sauce
Juice of 1 lime
Salt to taste
Microgreens or fresh cilantro for garnish
Combine all ingredients to a mixing bowl and toss to combine
Chill scallop mixture for a minimum of 10-15 minutes
Season scallop mixture with salt to taste
Serve and garnish with microgreens, fresh cilantro, and/or lime wedges
