Skate

Species:

Geography:
Skates are found in cold waters off the Atlantic coast from Newfoundland to Florida and off the Pacific coast from California to Alaska.
Seasonality:
July through January
Harvesting Method:
Skates are caught by gillnets and longlines.
Appearance/Flavor:
Skate wings are the edible portions of the skate. When cooked, the flesh separates into little fingers of meat that have a distinctive, rich, gelatinous texture accompanied by a mild flavor similar to that of scallop meat. Raw skate meat is slightly off-white, sometimes pinkish. When cooked, the meat is off-white. Skate meat is on the softer side but firms when chilled.
Buying/Handling/Storing:
Skate must be bled, gutted, washed and iced immediately upon catch. Chilling prevents the development of uric acid that breaks down into ammonia. Fresh and frozen wings are sold skin-on or skin-off as fillets or whole wings. Skin off is preferred because it is often difficult to remove. Skate should be sweet-smelling with no ammonia odor.
Cooking Methods:
Skate wings can be baked, poached, broiled, sautéed, fried, or grilled. Skate wings are composed of flesh, a layer of cartilage and another layer of flesh. The cartilage can be removed before or after cooking.
